Kale- The most underrated veg out there!!
Anyone else just absolutely LOVE kale??? Kale is one of the most versatile super veg, rammed full of nutrients, such as vitamin K, C & A, calcium and potassium. It has a lovely subtle flavour and is low in calories and carbs, contains anti-inflammatories and essential antioxidants.
Super simple ways to include Kale in your daily diet;
Add it to your breakfast or snack smoothies;
Throw it into a stir fry or soup;
Warm up a teaspoon of coconut oil or olive oil on an oven tray, add as much kale as you wish, (remember that like spinach, kale will significantly reduce in size when cooked) sprinkle with some sea salt, pepper and chilli flakes. Roast in the oven at 200c for no more than 5 minutes, and you have a winning and delicious addition to ANY meal!
I have also been known to just sit and destroy a bowl of roasted kale as a healthy alternative snack to crisps. The kids love it too!
If you, like us, have ventured into the world of growing your own vegetables during lock down, kale is well know for being a hardy winter vegetable, easy to grow throughout the harsh autumn/winter period and in most types of soil. Not only is it straightforward to grow but it’s cut-and-come-again crop will provide you with beautiful and ornamental leaves for months on end. Win win!!
