Soda Bread by Fox and Co

Big thanks to Andrew Fowler owner of Fox and Co Caterers, Edinburgh for sending in this Soda Bread recipe.

Believe it or not this is my favourite thing to bake and I get a huge satisfaction out of watching the kids devour something I made from scratch.

I know many folks that read this will bake all the time and this is not exactly Bake Off but for me who had never baked anything until Lockdown was upon us regards baking bread as a BIG deal!

This recipe is simple and takes no time at all to knock up.

SODA BREAD

250g Plain wholemeal flour

250g plain white flour

1 teaspoon bicarbonate of soda

1 teaspoon salt

Mix everything in a bowl together, then add 420ml buttermilk (instead you could use natural yogurt and milk)

You can add different flavour combinations. My favourite is sea salt and rosemary

Make a sticky dough (this can take a while, add more flour if you cant get the bloody stuff off your fingers) , and turn on to a floured surface.

Form gently in to a round shape ( don’t knead the dough!

Place on a greased baking tray for 30 mins at 200 degrees.

Makes a really nice, healthy bread for you to smash in one sessions with Nutella or your favourite spread or you could share it with the family with some bacon and eggs!

It’s also great toasted the next day if you manage not to eat it all straight out the oven!
