Paradise in a Cup - Raspberry, Coconut and Lime smoothie!!

Who would have predicted that this summer we would all be staying at home. So, rather than sitting at home and praying for some sun, we thought what better way to spoil you than bring the sunshine straight to you!

Blitz the following ingredients together in a blender until smooth;

  • 1 banana (preferably frozen)

  • 2 large handfuls of raspberries (preferably frozen)

  • 3 large tablespoons of coconut or greek yoghurt (or a dairy-free alternative)

  • 1 tablespoon of coconut flakes

  • 2 tablespoons of porridge oats

  • Juice of 1 lime

  • 3 or 4 ice cubes

  • 1 teaspoon of linseed and/or chia seeds (optional)

  • 2 tablespoons of vanilla protein powder (optional)

  • 250-300ml of coconut water or just water (ml dependant on how thick you like your smoothie!)

  • Pour into your favourite summer glass and enjoy in the sunshine!

This smoothie will take you to warm, tropical climates with the subtle flavour of coconut and lime, whilst the raspberry is a good old British summer favourite. Cocktail umbrella and flip flops are optional.

This method is based on 4 servings.

Frozen strawberries and/or mango are a brilliant alternative to raspberries if you’re looking to mix things up!
